the paleo kitchen cookbook review

Happy Father's Day to all the Dads out there, especially ours (although I don't think he reads our blog regularly). I hope you all enjoyed some lovely Spring weather and got some good "Dad time" on the books.

Now… on to the FOOD!

If you're like me, you reserved your copy of The Paleo Kitchen last year and waited (sometimes not so) patiently for its release. Well… IT'S FINALLY HERE!! And… living in Colorado meant we were the FIRST STOP on the book tour at The Tattered Cover. I cannot tell you how awesome it was to meet Juli from paleOMG and George from Civilized Caveman Cooking. I got there early and sat up front so we chatted a bit before the "official" start. They both were so nice and sweet and down-to-earth, REAL people. Juli even made some treats for us to try from the book. And getting a hug from George was a definite highlight. ;-)

I had a busy week at work, but was chomping at the bit (literally!) to make something. Today, finally, I was able to whip up a few of the recipes and they were AWESOME! We had the Four-Layer Beef & Bacon Casserole (pg 169) and Candied Bacon Chocolate Brownies (pg 275). Even the boy was in. "I wish all your Paleo food was this good." I keep thinking I'll convert him eventually… maybe if I make this once a week? HA!

Seriously, the book is fantastic. It's funny, intelligent, thoughtfully laid out and the photos are gorgeous! I HIGHLY recommend you grab yourself one!

In other news, I've been tweaking a chimichurri recipe and I think it's just about perfect. I'll have the recipe coming on Friday's post. Until then… Have a great week!!
