Whew! I don't know about you guys, but it's been a pretty crazy few weeks! And it's is most definitely summer here in Colorado. We almost hit 90 last week! Ick! Good thing it's only a few months of summer… not like when we lived in Miami when it was summer all year long. I'm not a fan of being hot. One good thing about Miami was the FOOD!! Quite literally, you could have anything you wanted within about a 45 minute drive (that goes for the shopping, too!), if not less
Happy Father's Day to all the Dads out there, especially ours (although I don't think he reads our blog regularly). I hope you all enjoyed some lovely Spring weather and got some good "Dad time" on the books. Now… on to the FOOD! If you're like me, you reserved your copy of The Paleo Kitchen last year and waited (sometimes not so) patiently for its release. Well… IT'S FINALLY HERE!! And… living in Colorado meant we were the FIRST STOP on the book tour at The Tattered Cover.
When you need a quick, delicious dinner (like for nights that your forgot to plan something for dinner, and you always seem to have bacon in the fridge, or is that just me?), I recommend this tasty chicken dish. One thing I did realize is that when you ge

Say that again, slowly. Creeeamy. Paleo (YAY!) Chicken. Enchiladas. Verdes. YUM!!! Even the boy said they were a "have-again", but then went on to ask why we never have again the "have agains"? HA HA HA! Cuz I like moving on to new things, that's why! Anyhoo… you totally need to go make
I'm so excited to post my first recipe!! I've made this a chili a few times and I think I've finally perfected it. Even the non-Paleo-boy liked it, so I know it's a winner. I HIGHLY recommend you make and… and then let me know your thoughts, or if you changed anything. Sorry… I couldn't wait to try it and forgot to take a picture until AFTER I had eaten almost all of it. THAT's how good it is! Just sayin'. phoodmoose chili 2 Tbsp coconut oil or fat of your choice 2 slice
