"smoked" salmon w/ creamy onion topping recipe


Another 5Shift winner tonight phoodies!! I had defrosted some salmon for a 3Shift dinner, but... it never got made. As I've mentioned before, I don't love salmon. I like it, it's ok, but it's not a favorite. However... this recipe may change all that! Even the boy expressed a few "WOW"s. And you WILL NOT believe how easy this was!


First, I soaked my cedar plank in water for about 3 hours. This is essential so as not to start a fire... unless that's your thing. If so, forget you know me.

Next, the boy created a pretty high indirect fire in the gas grill. This means the 2 outer burners were going, but not the middle.

Meanwhile, in a small bowl, I mixed up about 6 oz cream cheese, with 1/2 c homemade mayo, 3/4 cup chopped green onions, and 1 tsp Hawaiian pink salt (I like this best on fish).

Then, I patted dry the plank and salmon, and placed my 3 salmon steaks upon it. Now, here's the hard part... I smeared 1/3 of the cream cheese mixture over top of each steak, then sprinkled with smoked paprika. WHEW!! So hard, right?

As the plank went onto the grill, the heat was turned down to more of a medium and cooked for about 15 minutes, or until it flaked easily when poked with a fork. Now, I realize, this isn't TECHNICALLY smoking, but we haven't saved up our pennies for a Traeger, yet. And it still came out with a nice, if not mild, smokey flavor.

On a rack above the salmon, we also threw on a couple of leeks that were brushed with a bit of avocado until they had just a bit of char. So GOOD!!
