popcorn stock recipe
Did you know you can make a stock out of popcorn? I didn't. I mean, I guess in the grand scheme of things, you can make a stock out of just about anything, but I never thought "POPCORN!"
That is until... Heather and I (and our parents) were visiting Portland, having dinner at Urban Farmer. They have a side dish called Popcorn Grits. I was intrigued.
I ordered it thinking it was a play on words and that I'd get a dish of hominy or something? They look like popcorn, but are kind of grits, right? Plus, it had cheese.
When it arrived, it was just a oval ramekin of grits. I asked the waitress, where's the "popcorn" part? She then told me the grits were cooked in a popcorn stock. "A what?" I asked. She couldn't tell me the recipe, but told me they made a stock of popcorn. And when we tasted it... YUP... popcorn... and cheese!
It's the silliest thing, I admit, but I couldn't stop thinking about it. So when I returned home, I set out to make my own.
Turns out... it's really easy to make a stock... especially out of popcorn.
12 cups popped popcorn
8 cups water, or enough to cover
1-2 T salt
2 T butter
Add the popcorn to a large stock pot. Cover with water. (You may have to do this in stages. The popcorn shrinks down when you water it, so you can add more, then more water.)
Bring to a boil. Add 1 T salt and butter and stir. Taste and see if you need more salt.
Reduce heat to medium-low, cover and simmer for an hour.
Strain stock and use for all your grit cooking needs - don't forget the cheese! I also used this to cook rice and it was amazing!
