I had all the ingredients in my kitchen and needed to cook up some grass fed chicken drummies from Trader Joe's, so this recipe had all the right stuff. It was easy to prep the marinade and even easier to pop in the oven. An hour later, dinner was served and was delish! I subbed the capers for cornichons since I did not have them on hand. One thing I did realize is that when you get home from work at 6pm with kids in tow, a recipe that takes an hour to cook might not be your best choice. I'm on the hunt for a pressure cooker to help me pooh pooh my poor planning problem!
